Okay, who loves to snackโ Please tell me I'm not the only one here that loves to cuddle up and binge watch my favorite Netflix series while having my favorite snacks.๐ I know there has to be others out there that are like me.
I have some awesome news I'm going to share a amazing easy recipe with you that you can indulge in on those binge watching weekends or just any any time or day of the week.

Now let's get all of the items we need to make these cookies together.
You're going to need:
๐น1 Can of chickpeas or 1 cup of dried chickpeas cooked and cooled ahead of time
๐น Vanilla
๐น Peanut Butter
๐น honey , 100% maple syrup, or Agave the choice is yours
๐นBaking Powder
๐น Chocolate Chips , sugar free chocolate chips or cacao nibs the choice is yours
๐น Food processor or a bowl & fork

Now that you have all of the stuff to make them let's get these made so you can start binge-watching ๐ your favorite show.
Recipe:
๐ช preheat oven to 350°
๐น 1 Can chickpeas
๐น 1.5 ts. vanilla
๐น 3/4 c. Peanut Butter
๐น 1 ts. Baking powder
๐น 1/2 c. Chocolate chips
๐น 2-3 T. honey
๐ Add all ingredients but the chocolate chips into the food processor and process till the dough starts to come together. If you don't have a food processor smash chickpeas really well with a fork then add the rest of the ingredients and mix with a hand mixer.
Dump the dough into a bowl and add chocolate chips and fold in well.
Damp your hands with water and roll dough into small balls (about 2 tablespoons of dough) place on a cookie sheet and press down to flatten into round Circle shape. If you like the fork marks in your peanut butter cookies you can do that while pressing them down.
Let cookies cool all the way.
Cook your cookies :
Softer cookies - 14 to 15 min.
Harder cookies- 20 to 25 min.

โดyou can keep these in frig up to 4 days. They also can be frozen and thawed out in frig later.
I hope you get to try making these and enjoy them. These are one of my favorites, what I also love is that you can even play around with them a bit and instead of doing the chocolate chips you could do some crushed nuts, mini M&M's, or some raisins. Let me know if you give these a try and share with me what you think of them.
