No Cook Healthy Apple Pie Bites

**Ingredients:**
- 2 medium-sized apples (preferably Fuji or Gala)
- 2 tablespoons of almond butter or peanut butter (for a nuttier flavor)
- 1 tablespoon of honey or 100% maple syrup (for sweetness)
- 1 teaspoon of cinnamon
- 1/4 cup of granola (choose a low-sugar or no sugar option)
- Optional: a sprinkle of chopped nuts or dried fruits for extra texture

**Instructions:**
1. Start by washing and slicing the apples into thin rounds, about 1/4 inch thick. Be sure to remove the seeds and core from each slice to create a hollow center.
2. In a small bowl, mix together the almond or peanut butter, honey or maple syrup, and cinnamon until well combined.
3. Spread a thin layer of the nut butter mixture onto one side of each apple slice.
4. Sprinkle a pinch of granola onto the nut butter-covered side of the apple slice.
5. If desired, add a sprinkle of chopped nuts or dried fruits on top for added crunch and flavor.
6. Once all the apple slices are assembled, place them on a plate or tray and refrigerate for at least 30 minutes to allow the flavors to meld together and the apple slices to firm up.
7. Serve chilled and enjoy your guilt-free indulgence!

Whether you enjoy them as a midday snack or a dessert after dinner, these mini apple pies are sure to become a favorite in your household.

 

Oatmeal apple pies

Oatmeal Cookie crust

  • 1 cups  flour ( your choice) 
  • 1 cups rolled oats
  • 2/4 cups brown sugar ( your choice of brown sugar. sugar free works well and taste great.  I make our brown sugar by mixing will together  : 1cup organic sugar cane + 2 Tablespoons black strap molasses 
  • 12 Tablespoons coconut oil ( unrefined or refined I enjoy the added flavor of coconut from unrefined)

for the homemade Apple Filling Option

  • 2 Tablespoons coconut oil
  • 3-4 medium apples peeled, cored and diced in to 1/4-inch cubes
  • 1/2 cup brown sugar ( can use sugar free it is really good)
  • 3 Tablespoons water
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 Tablespoon + 1 teaspoon Arrowroot powder ( or corn starch)
  • 2 Tablespoons water

for the canned apple filling option

  • 1 can apple pie filling can be used they have sugar free canned pie filling
  • Caramel topping optional: adding caramel once cooled down 

 

 

INSTRUCTIONS 

  • Preheat oven to 350 degrees F. Grease cup cake tin ( I use a round silicon mold to make these it works so well)
  • In a medium size pan, melted oil, add apples, spices, brown sugar and 3 Tablespoons water. Cook over medium-high heat, for 4-6 minutes or until apples very slightly softened.
  • In a small dish combine arrowroot/cornstarch and 2 Tablespoons water. Add to pan while stirring and continue to cook until apples are tender, and filling is thickened, about 4-5 minutes. Cool.
  • Combine flour, oats and brown sugar in a large bowl. Add oil into the flour mixture in a food food processor and lightly process 
  • Place a heaping 3 tablespoon of the crust mixture into a greased muffin cup or mold. Press along the bottom.
  • Place about 3 tablespoon of apple filling in the crust. Sprinkle about 2-3 teaspoon of the remaining crust mixture on the top of filling.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes. Cool completely in the pan for 10 minutes. Use a knife to loosen from pan and they should pop right out.
  • Drizzle with caramel topping if desired
